Christmas Party 2021

We sincerely invite you to organise your company’s Christmas Eve 2020 in our hotel.
  
The proposed Christmas Eve menu - put together by HIGHLAND CONFERENCE HOTEL chefs team - combines Polish tradition with our specialty dishes made out of Highland beef from our own, ecological farm.


Following the philosophy of the Healthy Zone - without taste improvers and semi-finished products, always fresh and from local suppliers.

Soup
Chanterelle and dill soup

Main course
Roasted pike in kiwi sauce with potatoes and roasted cauliflower
Free-range chicken in sultan sauce with raisins, served with wild rice and carrots with peas

Snacks
Traditional vegetable salad
Cabbage with peas
Herring in three flavours
Carp fried in batter, marinated in apple vinegar
Dumplings with buckwheat and mushrooms
Homemade bread
Garlic and sun-dried tomato butter

Fish soup with mini French noodles

Main course
Pikeperch in boletus sauce with mashed potatoes and Coleslaw salad
Highland beef pouches served with roasted potatoes and vegetables

Snacks
Roasted beet carpaccio with sheep cheese powder and roasted pumpkin seeds
Salad with smoked fish and strawberry dressing
Herring under a blanket, with beet and egg
Dumplings mix ( one with cabbage and mushrooms and ‘ruskie’)
Fishballs with vegetables in jelly
Coulibiac
Homemade bread
Garlic and sun-dried tomato butter

What’s more, we encourage you to complement the above proposed menu with some extra dishes:

I. A platter of regional cheese (based on goat's and cow's milk) served with fresh, homemade Italian style bread as well as fig and onion jam

II. Free range farm rabbit, baked with vegetables and stewed in cream with dill

 

All of the above in the warmth of the fireplace, with a fragrant Christmas tree and music in the background
